
From Winter, after grape harvests, some people dream during holiday of about Saint-Vincent (in January) in the promises of next year by examining the fruits which cover the ivy. They believe they will determine the "watch" so that is to say the quantity of draft of bunches (therefore of future grapes), which will appear in spring according to on the grapevine. The size of vine stocks occupies the bulk of this period. In spring, the vegetation of vine stocks starts. To control vegetative development by the palissage, the rognage, and the ébourgeonnage, and to protect the hopes of crop become daily concerns. Climatic vagaries generate distances that can achieve more than twenty days between precocious year and late year. In the June second half, blossoming is a critical instant of the annual wine cycle because flowers are fertilized by the pollen. It requests a dry and hot period failing which "Coulure" compromises the hopes of crop. Eté, from July till September, the moods of the sky are decisive: a hot and dry time, assuring an exhibition grapes in light and in sun, allows to hope for big vintages. The regulation of vegetation and its protection against natural attacks are obvious. With Autumn grape harvests arrive which, in Champagne region, begin about hundred days after the middle of the flower. This period remains variable from one year to the next between the end of August (it was case in 1955) and the second decade of October (as in 1972 or in 1984).
